Sausage and Cheese Stuffed Zucchini Boats #LowCarb #Keto

I don’t have to tell you that Keto and low-carb diets are all the fad these days. I have been trying to do the Keto thing and watch my carb intake for the past few weeks. In doing so, I have been finding that eating this way really is not that complicated. I made Sausage and Cheese Stuffed Zucchini Boats for dinner earlier this week and they are delicious! I made enough to have leftovers for lunch the next day- so easy yet so delicious and filling!

Ingredients:

4-6 zucchini washed and halved

1 jar marinara or pasta sauce

8oz. shredded mozarella cheese

1lb. cooked sausage

salt/pepper for taste

1/2 tsp. onion powder

 

Directions:

Preheat over to 350 degrees.

Scoop out the center of each of the halved zucchinis to make a “boat”.

Place in a greased baking pan.

Pour spaghetti sauce over each “boat”.

Spread cooked sausage and cheese evenly over each zucchini.

Sprinkle onion powder, salt and pepper over the entire dish.

Bake at 350 degrees for 15-20 minutes or until zucchini are tender and the cheese is bubbly.

Serve and enjoy! My entire family loved these!

Easy Chicken Pot Pie Recipe

My mom has been making this homemade chicken pot pie for years, and now I make it for my guys! It is a go-to recipe that family asks for all of the time. Not only is it super easy and delicious, but you can also make it ahead of time and freeze it. I also whip up this recipe to take to friends who are sick or just because! I always get asked for the recipe and am happy to share my momma’s easy and delicious chicken pot pie!

Easy Chicken Pot Pie

Ingredients:

1 box of 2-count pre-made pie refrigerated pie crusts

2 cans of mixed vegetables

1 can of cream of chicken

2 cooked, seasoned chicken breasts, shredded (to save on time, I love to buy the rotisserie chickens and shred them)

salt/pepper for taste

onion powder for taste

Directions:

Preheat oven to 350 degrees.

Mix all the veggies, cream of chicken, shredded chicken salt and pepper and onion powder in a large bowl.

In a pie pan place one of the refrigerated pie crusts. Top the chicken mixture over the pie crust. Place the remaining pie crust on top of the veggie mixture. With a fork or knife, make sure to vent some areas in the top of the pie crust so that the steam can escape.

Bake for around 40 minutes or until pie crust starts to become brown and the chicken mixture is bubbly.

This yields one chicken pot pie. If you are going to use an entire rotisserie chicken, I would double the recipe and you could freeze one of the pies for later.

Serve and enjoy! We love to have this with a salad or fruit.

My family and I enjoy lemon and Parmesan, so we were excited to try the Creamy Lemon Parmesan Prego Cooking Sauce that I picked up at my local Publix. Every bite was packed full of cream, Parmesan cheese, garlic and lemon. So delicious!

Ingredients:

1 bunch of fresh asparagus with the ends cut off

1 lemon zested

1 small shallot sliced finely

salt/pepper to taste

olive oil

Directions:

Preheat oven to 375. Place the asparagus on a baking sheet with the lemon zest and shallots. Drizzle with olive oil just enough to coat. Sprinkle with salt and pepper. Roast in the oven for around 15-17 minutes or until the asparagus is tender. Serve and enjoy! I could eat this every day!

Cream Cheese Chicken Pockets

Ingredients:

1 bag Tyson Fully Cooked Grilled Chicken Breast Strips, 12 oz. shredded

1 7oz. tub Arla Cream Cheese removed from package and softened in the microwave

2 8-count packages of crescent rolls

2 cups breadcrumbs

1 stick butter, melted

salt/pepper to taste

¼ tsp. garlic powder

¼ tsp. onion powder

Directions:

Preheat oven to 350 degrees F.

Place shredded chicken and softened cream cheese in a bowl.

Add in seasonings and mix until combined.

Unroll the crescent dough. Use 2 squares of dough to form your pocket. Place the chicken mixture inside the dough and fold over to form a “pocket”.

Dip the chicken pockets in the melted butter then into the breadcrumb mixture.

Place the pockets in a baking dish and bake until golden brown.

Serve with your favorite vegetable or salad and enjoy! My guys love this dish and ask for it quite frequently!

Centsible Suppers: Barbecue Chicken Shepherd’s Pie

It is once again time for Centsible Suppers with My Sweet Savings! This week I shopped at Walmart and everything for my meal was right under $10. I had a great idea for this week’s meal as it combines all of my favorite items from a barbecue chicken dinner into one dish- Barbecue Chicken Shepherd’s Pie! I have to tell you that my family loved this dish and I will definitely be making it again! This should be enough to feed 4-6 people easily. You could add in another veggie if your prefer to make the meal go even farther. 

Here is what I bought:

Rotisserie Chicken marked down to $3.74. TIP: If you go to Walmart in the morning, they often have meat on markdown. I always buy several chickens, take the meat off the bone and freeze it!

1 can of sweet corn, drained $0.50

1 bag of mild cheddar and monterey jack shredded cheese, $2.24

1 bottle of honey barbecue sauce, $1.27

1 carton of pre-made mashed potatoes cooked according to microwave directions on package, $2.78

2-3 diced green onions, $0.50 (I forgot to add them in the picture)

Directions:

Preheat oven to 350 degrees.

Shred the rotisserie chicken and place in a bowl. Pour 3/4 jar of the barbecue sauce over the chicken and mix together.

In a small baking dish, place the barbecue chicken as the bottom layer

Layer the corn on top of the barbecue chicken

Sprinkle on the diced green onion

Add half the bag of cheese (around 1 cup)

Pour over the remainder of the barbecue sauce

Top with your cooked mashed potatoes and sprinkle with some seasoned salt.

Bake until bubbly around 20-25 minutes. During the last few minutes of baking, turn up the heat on the oven and let the potatoes broil.

Super Easy Dorito Taco Salad

Are you looking to spice up your weekend with something different on the menu? This Super easy recipe for Dorito Taco Salad may just be what you need! I have to thank my best friend Charity to introducing me to this recipe several years ago. My family loves it so much and there are very rarely leftovers!

INGREDIENTS:

1lb. ground turkey or hamburger

1 packet of taco seasoning

1 head Romaine lettuce

2-3 diced tomatoes

1 Can of black olives

Chopped green onions

1-2 Cups of shredded Colby Jack or Cheddar Cheese

1 8oz. bottle of Italian Dressing (Start with about 3/4 of the bottle then add more as you need it)

1 Bag of Doritos crushed up (you may not need the entire bag-I think I used 3/4 bag the last time I made this)

Any other taco fixin’s that your family may like

DIRECTIONS:

Brown the meat and add the Taco Seasoning Packet according to instructions on the packet.

Cut up all of your veggies and add into a large bowl.

Add in the browned taco meat and shredded cheese.

Right before you are ready to eat add in the Italian Dressing.

Add the Crushed Doritos on top and mix together everything.

Enjoy! This is sure to be a family favorite!

Slow Cooker Chicken Burrito Bowls

Today is for all the Mexican fans out there! I love Chipotle and always opt for the Burrito Bowls so this recipe of Slow Cooker Chicken Burrito Bowls is my take on that. I will tell you that this make a lot so be prepared. I like to take the leftovers and the next day we actually make burritos. My boys LOVE this dish. I like that you can really customize it to your liking and add whatever veggies that you and your family prefer.

INGREDIENTS:

2 Large Boneless Skinless Chicken Breasts

1 Tablespoon Olive Oil

2 Teaspoons Chili Powder

2 Teaspoons Garlic Powder

2 Teaspoons Onion Powder

2 Teaspoons Cumin

1 Teaspoon Salt

1 Teaspoon Pepper

4 Cups Chicken Broth

1 Can Diced Tomatoes (drained, rinsed)

1 Can Corn (Optional)

1 Can Black Beans (drained, rinsed)

2 3/4 Cup Rice of your Choice (we love Jasmine)

Toppings of your choice: Avacado slices, Fresh Tomatoes, Green Onions, Cilantro, Shredded Cheese, Etc…

DIRECTIONS:

Place chicken breasts in the slow cooker.

Pour the Chicken Broth, Diced Tomatoes, Olive Oil, Chili Powder, Cumin, Salt, Pepper, Onion Powder and Garlic Powder in the Slow Cooker.

Cook on low for around 4 hours until the chicken is cooked through.

Remove the chicken from Slow Cooker and set aside. I like to cut the chicken up in chunks at this point.

Place Rice, Black Beans and Corn (if used) in Slow Cooker.

Place Slow Cooker on High for 45 Minutes-1 Hour or until Rice is cooked. (Do not over cook or rice will become mushy)

Add the chunks of chicken back in the Slow Cooker. You can also add the Shredded Cheese in at this point if you prefer, but we like to add it on ourselves in the bowls.

Serve the Chicken and Rice mixture in bowls and add your favorite toppings like fresh Avacado slices, Fresh Tomatoes, Green Onions, Cilantro, Shredded Cheese, Sour Cream, Tortilla Chips, Etc…

Slow Cooker Salsa Chicken

Salsa Chicken is always a crowd pleaser not to mention it is super versatile. You can use it just as it is right from the slow cooker served over rice, or take your Taco Tuesday from Drab to Fab and serve the shredded mixture in tortillas with cheese and all of your favorite taco fixins! Yum! I also sometimes will add in a can of black beans or corn. You can also add in a block of cream cheese 30 minutes before you turn off the slow cooker and let in melt into the mixture. Ummm, yes, please! It is ridiculous! Let’s get to the recipe, right? Oh and did I mention the base of this recipe has 2 ingredients? Yep, SUPER easy!

INGREDIENTS:

3-4 Frozen Chicken Breasts

1 16-oz Jar of your Favorite Salsa

DIRECTIONS:

Place the frozen chicken breasts and salsa inside the Slow Cooker. Turn on Low Temperature for 6-8 hours.

Shred the mixture and enjoy just as is over rice or serve in your favorite tortillas as tacos. Either way, you will love this one and make it again and again!

Slow Cooker Sweet and Sour Meatballs is absolutely delicious and a great way to get the kiddos to eat their veggies! My boys actually jump up and down when I tell them that we are having this for dinner!
