You may have heard that The Home Depot has cancelled their Kid’s Workshops due to the current pandemic. They recently announced that in place of these workshops, many stores will be handing out Workshop Kits for FREE! If you are anything like our family, we have been spending a lot of time outdoors these past few months. It has been so nice to walk while the boys ride their bikes and scooters. I am always looking for ways to get the boys out of the house and to be more active, so when the folks at Fluxx Scooters asked me if I would be interested in reviewing a couple of their scooters for Brady I was so excited to jump at the opportunity! The Fluxx SSX Pro Stunt Scooter lets you ride like a pro! Recommended for kids ages 8 years and up, this scooter is lightweight and easy to handle and maneuver. This is very helpful for kids to develop riding skills and makes it easier to get progression. In addition, this is a smooth running scooter that is not only safe but also continue their enthusiasm for this trick’s sport. The two big wheels on the front help to keep the kids safe, and it has a lean-to-steer mechanism which helps to build balance skills at an early age. The ABEC-9 bearings are much smoother and quieter than most of sticky bearings, so kids can easily control the scooter. Assembly is super easy. Tighten 3 bolts only, then you’re ready to go! This scooter is available in several color options. We were sent the green one and I just love how vibrant it is!
The Fluxx DuoMini 2-in-1 Kick Scooter with Foldable and Removable Seat is a great scooter for kids ages 2-8 years old. We particularly love the 2-in-1 feature of this scooter and that young kids can sit down as they glide, and then move up to scoot mode as they grow up and gain more balance. Such a great learning tool! The scooter also has a foldable/removable seat! Kids can sit down and parent can push them forward. What’s more, you can easily fold the handlebar within 3 seconds. Talk about perfect portability! I personally feel that this is the perfect scooter for kids just starting out. The rustproof aluminum alloy T-bar tube has 3 adjustable height options (24.4/28.3/31.5 inch), and the rubber handle grips are comfortable and wick sweat. If you are tired of making dinner each night, I have an easy and budget-friendly recipe idea for you that takes little effort. Two Ingredient Slow Cooker Meatball Subs are so yummy and your entire family is going to think that you spent hours preparing them!
Ingredients:
1 bag frozen meatballs
1 jar of your favorite pasta sauce
Instructions:
Place the frozen meatballs and pasta sauce in slow cooker.
Cook on low for 4-5 hours or until the meatballs are cooked through.
Serve on your favorite sub roll and sprinkle with grated parmesan cheese.
Enjoy!

Isn’t it amazing how life can change in an instant? If you would have told me at the beginning of 2020 that I would be teaching my boys at home I probably would have laughed at you. We were so busy in the hustle and bustle of our everyday lives of school, sports, and extra-curricular activities that when we were required to stop and be at home all of the time, life definitely took an unexpected turn that I was not prepared for.
Life certainly hasn’t been easy these past few months and there have been some tears along the way. In the midst of our circumstances, I have chosen to be positive and to find happiness in the situation. This has actually been a much-needed time of refreshment, reflection, and family bonding. Sometimes we need to slow down so that we can reflect on all that we have been blessed with. One day when the boys are gone, I will look back and cherish the memories that we made while we were together. I have loved the long walks, talks with my boys, and just the extra time that we have had together as a family.
Drew is heading off to high school next year and before I know it, he will be college bound. Brady will be in 3rd grade, and that certainly doesn’t seem possible! Didn’t I just bring him home from the hospital? I am certainly excited for both of my boys and know that they have a bright future ahead. Are you looking for a new dish to spice up your weeknight dinner routine? These Gluten Free Chicken Alfredo Rollups are sure to be a new family fave! My family thoroughly enjoyed them and told me that they could not wait until I make them again. Even though this particular dish is Gluten Free, you can sub out the gluten free lasagna noodles for regular if you prefer. Serve with your favorite salad and bread and you have one delicious dinner!
Gluten Free Chicken Rollups
Ingredients:
10 Gluten Free lasagna noodles (I prefer this brand)
3 cups of cooked, shredded chicken. A rotisserie chicken works great for this!
15 oz. tub of Ricotta cheese
1 jar of your favorite Alfredo Sauce
Salt/pepper to taste
1/2 tsp. Garlic Powder
1/2 tsp. Onion Powder
1/2 tsp. Italian Seasoning or Oregano
2 cups shredded Mozarella Cheese
1 cup fresh, shaved parmesan cheese
Instructions:
Preheat oven to 350 degrees.
Cook the Gluten Free pasta in boiling water just until al dente. Do not overcook. You want the noodles to be cooked firm enough to handle. They will finish the cooking process in the oven.
When the noodles have finished cooking, lay them on a flat surface such as a large baking sheet.
In a large bowl, combine the shredded chicken, ricotta cheese and spices.
In the bottom of a 9×13 baking dish, pour some of the alfredo sauce for the noodles to sit on top of. This will help to keep the bottom of the noodles moist.
Begin the rollup process by adding several tablespoons of the chicken mixture onto the lasagna noodle. Make sure to leave enough room so that you can roll up the noodle.
Continue this process until all 10 noodles are filled with the chicken ricotta mixture and rolled up in the baking dish.
Add the remaining alfredo sauce on the top of the noodles.
Top with the mozzarella and parmesan cheese.
I like to sprinkle extra Italian Seasoning on top of the dish.
Cove the dish with aluminum foil and bake for 2o minutes. Then, remove the foil and bake for another 10 minutes until everything is bubbly.
Serve and enjoy!
