(All posts may contain affiliate links or sponsored content. Please see my disclosure policy)

For many parts of the country, school is back in session! Healthy lunches and dinners can sometimes be challenging as we are learning to balance schedules, extra-curricular activities and more. I am here to help make your life easier! While this post is sponsored by Healthy Family Project, all opinions and the recipes are my own.

Is school back in session yet for your kiddos? We went back around 2 weeks ago, and I can’t believe how quickly that time is already flying by. My oldest son Drew is a junior in high school, and Brady, our 10-year-old is in fifth grade. Since I have 2 very active boys, you can imagine that they are always hungry!

I teach part-time at Brady’s school, so meal planning and preparation are very important to me! The last thing that I want to think about each night is what to make for dinner, or what to pack in the boy’s school lunches for the next day. The meals and snacks that I prepare for my family, must not only be quick and easy, but they must also be healthy. I love to add lots of fresh fruits and veggies to every meal or snack to ensure that our family is getting the nutrients that we need.

With the kids heading back to school, life is about to get a lot busier for all of us! Whether you are taking the kids back and forth to school, or all the extra-curricular activities that they have, here are 4 easy and healthy dinner and lunch recipes to help your school year get off on the right track. I am also including an extra bonus dessert recipe because some days you need dessert!

I serve them over Pero Family Zucchini Noodles that you cook in the microwave for just a few minutes. This meal is a family favorite and filled with veggies and protein!

Place the package of chicken meatballs in the slow cooker.

Pour the jar of marinara sauce over the meatballs,

Easy Roasted Broccoli

(All posts may contain affiliate links or sponsored content. Please see my disclosure policy)

One of our favorite veggies to enjoy as a family is definitely broccoli. Thankfully, my boys would eat it every day! I love to make it a variety of different ways to kind of mix things up a bit. One of our favorite ways to eat broccoli is to roast it in the oven until it gets nice and golden brown and has a nutty flavor. Do you have a favorite way to make broccoli? I would love to hear!

Ingredients:

1 large head of broccoli

2 -3 tablespoons olive oil

Sea salt

Directions:

Preheat oven to 400 degrees.

Break the head of broccoli up into smaller bite sized pieces.

Place on a large cookie sheet pan.

Cover the broccoli with the olive oil. Make sure to coat all the broccoli so it gets cooked all over.

Season with salt.

Place in the oven to bake for around 15-20 minutes. At the halfway point of cooking, I like to take the broccoli out of the oven to shake it around a bit for even cooking.

You will know the broccoli is done when it has a nice brown crispy texture.

You can even add some Parmesan cheese at the end of the cooking process if you prefer.

Serve and enjoy! Yumm! Your entire family will love this!

Lemon and Shallot Roasted Asparagus

(All posts may contain affiliate links or sponsored content. Please see my disclosure policy)

One of my favorite veggies of recent has been asparagus. There is something about it that screams summertime and fresh. I wasn’t sure that my boys would enjoy it, but when I roast it in the oven, they seem to gobble it up! One of favorite ways to roast asparagus is with fresh lemon peel, shallots and olive oil. Yum!

Lemon and Shallot Roasted Asparagus

Ingredients:

1 bunch of fresh asparagus with the ends cut off

1 lemon zested

1 small shallot sliced finely

salt/pepper to taste

olive oil

Directions:

Preheat oven to 375. Place the asparagus on a baking sheet with the lemon zest and shallots. Drizzle with olive oil just enough to coat. Sprinkle with salt and pepper. Roast in the oven for around 15-17 minutes or until the asparagus is tender. Serve and enjoy! I could eat this every day!

Baked Zucchini Fries

(All posts may contain affiliate links or sponsored content. Please see my disclosure policy)

I don’t know about you, but I am always searching for ways to get more vegetables into my diet. It can be a struggle some days, right? I know that I am not alone!

One of my favorite vegetables is zucchini. I love that it is so versatile. You can make noodles out of it, sautee it, bake it and more! I recently made zucchini “fries” and they were so delicious! These “fries” are so easy to make and you can dip them in your favorite low calorie dipping sauce!

Baked Zucchini Fries

3 medium zucchini rinsed

no calorie butter spray

salt, pepper to taste

2 tablespoons bread crumbs

Directions:

Cut the zucchini into strips to resemble fries and place on baking tray.

Spray the zucchini with the butter spray and season with the salt and pepper.

Sprinkle on the breadcrumbs.

Combine all of the ingredients together and bake at 350 until done. This typically takes about 20 minutes.

If you want more breadcrumbs to make them even crispier, you can add more. I am just trying to watch my caloric intake since I am doing the Nutrisystem plan.

Enjoy! These are so delicious! I dipped them in Calorie Free Walden Farms Ranch dressing that I buy at Publix.

You will want to eat the entire pan! Go ahead, zucchini is so good for you!
