Fall Dessert Cobbler Recipes

I don’t know about you, but I absolutey love cobblers! Cobbler is related to crumbling and crisp desserts. It is a deep-dish fruit dessert with a thick biscuit topping, or in some cases, a loose crumb topping. Cobbler is typically made using fruits such as apples, peaches, blueberries, and raspberries. The following are some fruit cobbler recipes that use less common fruits. I hope that you will enjoy!

Slow-Cooker Blackberry Cobbler

Ingredients:

3 cups fresh blackberries
1/2 cup sugar
1/3 cup water
1 teaspoon lemon juice
1 cup biscuit mix
2 tablespoons sugar
1/3 cup milk
2 tablespoons melted butter
1/2 teaspoon cinnamon
1 teaspoon sugar

Directions:

Spray the slow-cooker with a non-stick spray.
Mix the blackberries, sugar, water, and lemon juice in the slow-cookerócook on low for 3 to 4 hours, or until boiling.
Combine the biscuit mix with 2 tablespoons of sugar in a bowl.
Stir in the milk and butter until the dry ingredients are moist.
Drop 6 to 8 dollops of batter onto the hot fruit mixture in the slow-cooker. Combine the sugar and cinnamon and sprinkle it over the top.
Cover and cook on high for approximately 25 minutes. Serve warm, topped with ice cream or whipped topping.

Pear Cobbler

Ingredients:

2 cups fresh pears, peeled and sliced
2 cups sugar, divided
1/2 cup butter
3/4 cup flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3/4 cup milk
1 egg

Directions:

Mix the pear slices with 1 cup of sugar and set aside.
Put the butter into a casserole dish and melt in the oven at 325 degrees.
Combine the dry ingredients, including the remaining sugar, until well-combined.
Beat the egg and mix it with the milk. Add this mixture to the dry ingredients.
Pour the mixture over the butter, and do not stir it.
Place the pears on top of the batter without stirring and bake for about 1 hour at 325 degrees.
Cool before serving and top with a sprinkle of brown sugar and pecan pieces, along with a dollop of whipped cream or vanilla ice cream.

Nectarine Cobbler

Ingredients:

5 to 6 nectarines, peeled and sliced
4 tablespoons salted butter, cut into chunks
3/4 cup flour
2/3 cup sugar
1 teaspoon baking powder
1/2 cup milk
1/4 cup cream
1 teaspoon cinnamon, divided
1/2 teaspoon nutmeg
2 tablespoons sugar

Directions:

Preheat the oven to 350 degrees F.
Place the butter chunks into a casserole dish and put them into the oven until the butter is melted.
Mix flour, sugar, baking powder, milk, cream, 1/2 teaspoon of cinnamon, and the nutmeg, pouring into the casserole dish.
Mix the remaining 1/2 teaspoon of cinnamon with the 2 tablespoons of sugar.
Place the nectarines on top of the batter and sprinkle with the cinnamon-sugar mixture.
Bake for approximately 55 minutes and cool before serving. Serve with vanilla ice cream and a sprinkling of chopped walnuts. Or, if preferred, use low-fat frozen yogurt in place of ice cream.

Three Ingredient Pumpkin Spice Muffins

As a lover of all things Pumpkin, I am excited to share this super easy recipe for 3 Ingredient Pumpkin Spice Muffins! I love that you can make these and store the rest in the refrigerator or freezer when you need a Pumpkin Spice pick-me-up! These would be great served during the holidays as well for a brunch or breakfast! The vanlla yogurt in these makes them super moist and adds a ton of flavor!

3 Ingredient Pumpkin Spice Muffins

Prep Time: 3 minutes

Cook Time: 16-18 minutes

Total Time: 19-21 minutes

Makes: 18 muffins

Ingredients:

● 1 box of Duncan Hines Perfectly Moist Spice Cake (or any other boxed spice cake)

● 1 15oz can of pumpkin

● ⅓ cup vanilla yogurt

Directions:

1. Preheat the oven to 350℉. Line two cupcake baking pans with cupcake liners. (18 for larger muffins, or 24 for smaller muffins)

2. In a large bowl add the box of spice cake mix, can of pumpkin, and vanilla yogurt. Mix lightly with a spoon, then blend with a hand mixer to remove all lumps.

3. Using a spoon or small measuring cup, fill the cupcake liners ¾ full with the prepared batter. Bake for 16-18 minutes, or until a toothpick inserted in the middle of the muffin comes out clean. Place on a cooling rack and let cool slightly. The muffins are best served slightly warm. Muffins will keep in the refrigerator for up to one week.

Sweet Potato, Apple & Turkey Chili

If you are looking for a new chili recipe to add to your menu this fall, this Sweet Potato, Apple & Turkey Chili is going to be your new favorite! It combines sweet and savory elements into one delicious dish. It is delicious served with cornbread on the side.  Let me know if you try it! I love to think that this is fall in a dish! 

Sweet Potato, Apple & Turkey Chili

Prep Time: 10 minutes

Cook Time: 22 minutes

Total Time: 32 minutes

Servings: 4-5

Ingredients:

● 1 ½ tbsp olive oil

● 1 medium sweet potato, peeled and cut into small chunks

● 1 medium onion, diced

● 1 ½ tbsp minced garlic

● 2 tbsp chili powder

● 4 tsp ground cumin

● 2 tsp smoked paprika

● ¼ tsp salt

● 2 ¾ c water

● 1 15oz can black beans

● 1 15oz can dark red kidney beans

● 1 14oz can diced tomatoes

● 3 tsp lime juice

● 1 large Granny Smith apple, diced

● 1 13oz Turkey Polska Kielbasa, cut into small chunks

● Optional: sour cream and cheese for topping

Directions:

1. Heat the olive oil in a large pot over medium-high heat. Add the sweet potato and onion, and cook until the onion begins to soften, approximately 3-4 minutes. Pour half of the lime juice over the apples to keep them from turning brown until they are ready to be added.

2. Add the minced garlic, chili powder, cumin, smoked paprika, and salt. Continue cooking for 30 seconds, stirring constantly. Add the water, and bring to a simmer. Cover, and reduce the heat to medium-low. Simmer for approximately 10 minutes, or until the sweet potatoes are tender.

3. While the sweet potato mixture is cooking, heat a large skillet pan over medium-high heat. Add the turkey kielbasa to the pan. Cook approximately 5 minutes, stirring constantly, until the turkey is lightly browned on each side. Set aside.

4. Add the black beans, kidney beans, tomatoes, and remaining lime juice to the sweet potato mixture. Increase the heat to high until the mixture returns to a simmer, stirring often. Reduce the heat back to medium-low, and add the turkey kielbasa and apple. Stir well, and let simmer for about 5 minutes. Remove from heat and serve. Top with cheese and sour cream if desired. Pumpkin Spiced French Toast Casserole

There is something about Fall that makes me want all the pumpkin goodies! I absolutely love Pumpkin Spice Lattes and Coffees, and I could devour and entire pan of Pumpkin Muffins! If you are like me and have a passion for all things pumpkin, this Pumpkin Spiced French Toast Casserole is going to be a new family favorite for sure! You can easily make this a Gluten-Free recipe by substituting GF bread. This would also be the perfect dish to serve for a Thanksgiving Brunch!

Pumpkin Spiced French Toast Casserole

Ingredients:

● 1 stick of butter (½ cup)

● 1 cup of brown sugar

● 1 loaf of thickly sliced bread (Sara Lee’s Artesano Brioche is perfect for this recipe)

● 4 eggs

● 1 cup pumpkin spice coffee creamer (Coffee Mate Natural Bliss Pumpkin Spice Creamer was used for this recipe)

● ½ cup whole milk

● 1 ½ tsp pumpkin spice

● Optional: powdered sugar and maple syrup for topping

Directions:

1. In a medium saucepan, melt one stick of butter over medium heat. Add the cup of brown sugar, and stir continuously until the sugar has mostly melted and combined with the butter. Be careful not to overcook or burn the butter. Pour the mixture into a 9×13 baking dish, and spread evenly across the bottom.

2. In a large mixing bowl, beat eggs, pumpkin spice coffee creamer, and milk until well blended.

3. Place slices of bread on the butter and brown sugar mixture to form one layer. Spoon or pour half of the egg mixture over the bread. Add a second layer of bread on top, and spoon or pour the remaining egg mixture over the bread.

4. Sprinkle pumpkin spice over the bread. Cover with foil, and refrigerate overnight, or for at least six hours.

5. When you are ready to bake, remove the dish from the refrigerator, and let sit for about 15-20 minutes. (This is especially important if using a glass baking dish, so that you are not putting a cold glass dish into a hot oven)

6. Preheat the oven to 350℉. Bake the casserole for 30 minutes with the foil on, and then remove, and bake for an additional 15 minutes. Sprinkle with powdered sugar and serve with maple syrup if desired.

Ingredients: 

  • Whipped Cream Cheese
  • Sliced Bananas
  • Blueberries 
  • Toasted White Bread (you can use regular or gluten free) 

Directions: 

  1. Take a slice of toasted white bread and spread whipped cream cheese on top.
  2. Take 3 slices of banana. Place two slices on top of the toast for ears and one at the bottom for a mouth.
  3. Take two blueberries and place them on the toast as eyes.
  4. Take another blueberry and place it on the banana mouth.
  5. Serve & enjoy! Your kiddos (and even adults) are sure to love this!

Chicken Pesto Pizza

Ingredients:

2 count pack of Green Giant Cauliflower Pizza Crust

3 tablespoons of your favorite Pesto Sauce

2 cups shredded mozarella cheese

2 cups cooked chicken cubes (you can also use cubed rotisserie chicken)

1/2 red onion thinly sliced

 

Directions:

Preheat oven to 425 degrees

Place the Green Giant Cauliflower Crusts on a sheet pan and bake for 8-10 minutes

Remove from the oven and let cool for a few minutes

Top each Cauliflower Crust with 1 1/2 tablespoon of Pesto

Place 1 cup of cubed chicken and 1 cup of shredded mozarella cheese on top of each pizza

Place equal amounts of red onion on each pizza

Bake at 425 for another 8-10 minutes or until the crust is nice and crispy and toppings are melted and bubbly.
