Caprese Grilled Cheese and Turkey Sandwiches

Ingredients:

1 24 oz. loaf of Arnold Country Buttermilk Bread

1 8oz. tub of Hillshire Farm Naturals Turkey Breast Lunchmeat

Spreadable butter

Fresh basil leaves (add as much or as little as you prefer)

1 package of Mozzarella deli cheese slices

2-3 sliced tomatoes

Directions:

Preheat a griddle or non-stick skillet.

Butter the slices of bread. Add on the turkey, tomatoes, basil and cheese. You can pile the ingredients on however you prefer.

On a griddle or non-stick skillet, add the sandwiches and cook each side until golden brown and the cheese is melted through.

Serve and enjoy! Be careful. You will not be able to stop at just one sandwich! My husband told me 4 times how delicious that they were and he asked when I would be making them again!

Super Easy Dorito Taco Salad

Are you looking to spice up your weekend with something different on the menu? This Super easy recipe for Dorito Taco Salad may just be what you need! I have to thank my best friend Charity to introducing me to this recipe several years ago. My family loves it so much and there are very rarely leftovers!

INGREDIENTS:

1lb. ground turkey or hamburger

1 packet of taco seasoning

1 head Romaine lettuce

2-3 diced tomatoes

1 Can of black olives

Chopped green onions

1-2 Cups of shredded Colby Jack or Cheddar Cheese

1 8oz. bottle of Italian Dressing (Start with about 3/4 of the bottle then add more as you need it)

1 Bag of Doritos crushed up (you may not need the entire bag-I think I used 3/4 bag the last time I made this)

Any other taco fixin’s that your family may like

DIRECTIONS:

Brown the meat and add the Taco Seasoning Packet according to instructions on the packet.

Cut up all of your veggies and add into a large bowl.

Add in the browned taco meat and shredded cheese.

Right before you are ready to eat add in the Italian Dressing.

Add the Crushed Doritos on top and mix together everything.

Enjoy! This is sure to be a family favorite!

Slow Cooker Chicken Burrito Bowls

Today is for all the Mexican fans out there! I love Chipotle and always opt for the Burrito Bowls so this recipe of Slow Cooker Chicken Burrito Bowls is my take on that. I will tell you that this make a lot so be prepared. I like to take the leftovers and the next day we actually make burritos. My boys LOVE this dish. I like that you can really customize it to your liking and add whatever veggies that you and your family prefer.

INGREDIENTS:

2 Large Boneless Skinless Chicken Breasts

1 Tablespoon Olive Oil

2 Teaspoons Chili Powder

2 Teaspoons Garlic Powder

2 Teaspoons Onion Powder

2 Teaspoons Cumin

1 Teaspoon Salt

1 Teaspoon Pepper

4 Cups Chicken Broth

1 Can Diced Tomatoes (drained, rinsed)

1 Can Corn (Optional)

1 Can Black Beans (drained, rinsed)

2 3/4 Cup Rice of your Choice (we love Jasmine)

Toppings of your choice: Avacado slices, Fresh Tomatoes, Green Onions, Cilantro, Shredded Cheese, Etc…

DIRECTIONS:

Place chicken breasts in the slow cooker.

Pour the Chicken Broth, Diced Tomatoes, Olive Oil, Chili Powder, Cumin, Salt, Pepper, Onion Powder and Garlic Powder in the Slow Cooker.

Cook on low for around 4 hours until the chicken is cooked through.

Remove the chicken from Slow Cooker and set aside. I like to cut the chicken up in chunks at this point.

Place Rice, Black Beans and Corn (if used) in Slow Cooker.

Place Slow Cooker on High for 45 Minutes-1 Hour or until Rice is cooked. (Do not over cook or rice will become mushy)

Add the chunks of chicken back in the Slow Cooker. You can also add the Shredded Cheese in at this point if you prefer, but we like to add it on ourselves in the bowls.

Serve the Chicken and Rice mixture in bowls and add your favorite toppings like fresh Avacado slices, Fresh Tomatoes, Green Onions, Cilantro, Shredded Cheese, Sour Cream, Tortilla Chips, Etc…

Slow Cooker Lasagna

If you love Lasagna but don’t enjoy the tedious task of assembling it, this dish is for you! Lasagna made right in your slow cooker! My family loves this dish and raves over it even more than when I make a regular lasagna in the oven. And, the best part? It can cook in the slow cooker and be ready for you when you need dinner on the table at night!

INGREDIENTS:

1 pound of Ground Turkey or Ground Beef

1 Small Onion Diced

Dried Garlic

Uncooked Lasagna noodles

1 jar of your favorite spaghetti sauce

1 1/2 cups cottage cheese

1 1/2 cups shredded Mozzarella cheese

2 tablespoons grated Parmesan cheese

DIRECTIONS:

Brown the Ground Beef or Turkey with Diced Onion and Sprinkle Dried Garlic over. Drain. Spoon 1 Cup of Spaghetti Sauce over the bottom of the Slow Cooker. Place 2-3 Lasagna Noodles on Top of the Sauce. Next, Place 1/3 of the Meat mixture on top of the noodles. Spread 3/4 Cup of Cottage Cheese on top of Meat Mixture followed by 1/2 cup of Shredded Mozzarella Cheese. Repeat these steps 2 more times. For the last step, place the 2 tablespoons of Parmesan Cheese on top. Cook on low for 4 hours. Do not cook more than 4 hours or it may get overdone.

Chicken Alfredo Bacon Pizza (yields 2 pizzas) 

Ingredients:

1 21.5 oz. Family-sized jar RAGÚ Cheese Creations Classic Alfredo Pasta Sauce

2 cans refrigerated pizza dough

½ bag spinach chopped into bite-sized pieces

1 bag of pre-cooked bacon pieces

1 small red onion diced

1 bag of refrigerated cooked chicken strips chopped into bite-sized chunks

1 bag Italian cheese blend

Directions:

Spray 2 non-stick pizza stones with cooking spray.

Unroll the refrigerated pizza dough and place on each pizza stone.

Spread the RAGÚ Cheese Creations Classic Alfredo Pasta Sauce over the pizza crust.

Top with chicken, onion, bacon pieces, spinach, and Italian cheese blend.

Place in 350 degrees oven until pizza crust is golden brown and the Alfredo sauce is bubbly.

Autumn Squash Soup

It’s autumn and that means we are looking forward to hearty and comforting meals. I especially love a delicious bowl of soup. What are you favorite soups to comfort you and your family during those chilly fall days and nights?

The soup is one of my absolute favorites that I get every. single. time. at Panera during the fall months…. Autumn Squash Soup. If you are not familiar with this soup, you must try it. It is so amazing! It is also Gluten Free which I love! This particular recipe is compiled of several different recipes that I created to make my own. It tastes just like the one at Panera! Autumn Squash Soup

INGREDIENTS: 

1 Large Butternut Squash (Mine was about 3 pounds)

1 15oz. Can of Pumpkin Puree

2 Tablespoons Olive Oil

3 Tablespoons of Brown Sugar

1/2 Teaspoon Cinnamon

1/4 Teaspoon Nutmeg

1 1/2 Teaspoons of Sea Salt

1/4 Teaspoon of Pepper

1/4 Teaspoon Curry

1 Cup Apple Juice

2 Cups Vegetable Stock

1 1/2 Cups Half Half

Roasted Pumpkin Seeds and Sour Cream for Garnish

DIRECTIONS:

Peel the Butternut Squash, Remove seeds and Dice into Cubes. Place into a Baking Dish. Drizzle with Olive Oil, Sprinkle with Salt and Pepper and massage into the squash.

Bake in 400 oven for about 35 minutes or until Squash is fork tender.

Mash the Squash with a Potato masher or whatever tool you have on hand and place in a Ninja Blender (Or, you can place the Mash directly in the Stock Pot and use an Immersion Blender)

Add the canned Pumpkin Puree, Vegetable Stock, Apple Juice, Half and Half.

Place the Blender on High and Puree Until Silky Smooth.

Add the Brown Sugar, Curry, Cinnamon, Nutmeg, Salt and Pepper and place on Medium Heat until heated through.

Garnish with Pumpkin Seeds and Sour Cream.

Serve and Enjoy!

Quick and Easy Cuban Pork Sliders Made with Smithfield Pork #RealFlavorRealFast

I can hardly believe that it is almost time for school to begin! I am not quite sure where the summer has gone, but alas, it is once again time to get back into a routine of prepping, planning and preparing easy weeknight dinners.

These products are also super versatile as they can be grilled, roasted, sautéed or slow cooked. In addition, they are already marinated which means that they are packed full of scrumptious flavor.

My Safeway store had a wide variety of Smithfield Marinated Fresh Pork products, so it was hard for me to decide on just one! Smithfield Roasted Garlic and Herb Pork Loin Filet Cuban Pork Sliders

Ingredients:

Smithfield Roasted Garlic and Herb Pork Loin Filet

12 slider buns

12 small pieces of deli ham

12 small pieces of Swiss cheese

12 pickles

Mustard

Directions:

Place the Smithfield Pork Loin Filet in a slow cooker for 4-6 hours on low. You will want to ensure that the meat is cooked through to 145 degrees Fahrenheit. Slow cooking the Smithfield Roasted Garlic and Herb Pork Loin Filet allows the flavors to really distribute throughout the meat and it becomes so tender and juicy!

Remove the pork from the slow cooker and let it rest on a cutting board while you set out the other items for the sliders. Slice the pork into medium sized medallions to place on the sliders.

Place a couple of pork medallions onto a slider bun and assemble the rest of the slider with ham, Swiss cheese, pickles and mustard. Voila! You have the perfect Cuban Pork Sliders! This quick and easy dish is sure to be one of your new family favorites and one that you will reach for again and again!

Grilled Chicken With Tropical Salsa: Feed a Family of Four for Under $10 with Products from Sprouts!

I had the opportunity to visit the new Sprouts Farmers Market in Palm Harbor, FL earlier in the week for a behind-the-scenes blogger tour. You can see my full review of the experience HERE. Since Sprouts is known for healthy living for less, I thought that it would be fun and helpful to prepare an easy meal with ingredients from my recent visit. Sprouts Farmers Market allows us to get healthy and delicious meals on the table without breaking the bank. In fact, I prepared this easy meal of grilled chicken with tropical salsa and jasmine rice for only $8.55! That is just $2.14 per serving for a family of four!  

Sprouts products used and pricing for each item: 

Sprouts boneless skinless chicken thighs @ $1.67 lb. I used half of the package so that was around $3.

Sprouts organic jasmine rice @ $1.99

1 Lime @ $0.20 each

2 Mangos @ 2 for $1

1 Pineapple @ $0.98

1 Bunch Cilantro @ $0.69

1 Red Onion @ $0.69

 

Salsa directions:

1 fresh pineapple cut in half and diced

2 fresh mangoes diced

1 small red onion diced

1 bunch of cilantro copped (you can use as little or as much as you prefer)

1 lime juiced

Salt to taste

Dice up all ingredients and place in a bowl. Add lime juice and salt to your taste. You can add as little or as much as you need.

Serving directions:

Prepare your rice according the package directions. While the rice is cooking, grill your boneless skinless chicken thighs.

Serve the tropical salsa over the rice and chicken and enjoy! This meal is so healthy, fresh and delicious…..perfect for summer!

Easy Sesame Chicken

Are you looking for a yummy chicken dish that tastes just like your favorite takeout? Easy Sesame Chicken is absolutely delicious! Not only will you save money by making your own takeout, but this dish is very easy to prepare as well! My guys devoured this dish and there were no leftovers!

(recipe adapted from Budget Bytes)

INGREDIENTS: 

Chicken:

1 large egg

2 Tbsp cornstarch

Salt & pepper to taste

1 lb. boneless skinless chicken thighs

2 Tbsp veg. oil for frying the chicken

 

Sauce:

4 Tbsp soy sauce

2 Tbsp water

1 Tbsp toasted sesame oil 

3 Tbsp brown sugar

3 Tbsp rice wine vinegar 

2 inch fresh ginger, grated

2-3 cloves minced garlic

2 Tbsp sesame seeds 

1 Tbsp cornstarch

 

For Serving:

Chopped green onions for garnish

Hot jasmine rice to serve the chicken on top of

Extra sesame seeds

 

DIRECTIONS:

In a large bowl, whisk together the egg, 2 Tbsp cornstarch, salt and pepper. Cut chicken thighs into 1 inch pieces. Toss the chicken in the egg and cornstarch mixture.

Heat a large skillet or wok with 2 Tbsp of vegetable oil over medium-high heat. When the oil is very hot, add the chicken and all of the egg mixture. Cook the chicken, stirring only occasionally, until it is golden brown and cooked through (about 7-10 minutes).

While chicken is cooking, prepare the sauce. In a small bowl stir together the soy sauce, water, sesame oil, brown sugar, rice vinegar, fresh ginger, minced garlic, cornstarch, and sesame seeds. 

After chicken is cooked through and golden brown, pour the sauce over top. Toss the chicken to coat in the sauce. The sauce should begin to thicken as soon as it hits the hot skillet. Once the chicken is coated and the sauce thickened, turn off the heat.

Serve over hot jasmine rice and sprinkle with chopped green onions and additional sesame seeds if you prefer.

Brown Sugar and Balsamic Glazed Pork Chops #SundaySupper

We love pork chops in our house, but it can sometimes be challenging fInding new ways to prepare them. I was so excited to have the opportunity to come up with a new recipe that combines sweet and sour flours into one perfect bite. Brown Sugar and Balsamic Glazed Pork Chops are sure to be your family’s new favorite! My boys licked their plates clean and my husband told me that these were the best pork chops he had ever eaten. I’d say they are a winner!

This week the #SundaySupper Tastemakers are bringing you Easy Pork Chop recipes that will make your mouth water! A big thank you goes out to our amazing host Shelby from Grumpy’s Honeybunch who helped to make this event happen!

Ingredients:

4 large size boneless pork chops

1/4 cup balsamic glaze (You can make your own, but I found the most delicious pre-made variety at the store that I have been loving)

3 tablespoons brown sugar

1 tablespoon honey

2 tablespoons butter

1/2 teaspoon oregano

1/2 teaspoon mediterranean spiced sea salt

2 cloves minced garlic

salt/pepper to taste

Directions:

1. Preheat your oven to 350 degrees.

2. Add the 2 tablespoons of butter to an oven safe skillet and let it melt. Add the pork chops and let them brown on both sides. Be sure to season both sides of the pork chops with salt and pepper as you turn them to sear.

3. Place the pork chops in the oven and let them cook for around 10 minutes.

4. While the pork chops are cooking you can prepare your glaze. Add your prepared balsamic mixture, brown sugar, honey, oregano, minced garlic, pinch of pepper (you could even use pepper flakes if you like really spicy) and mediterranean spiced sea salt to a bowl and mix well. The mixture should be nice and thick.

5. Start spooning your prepared glaze onto to the chops during the remainder of the cooking process. You can do this as many times as you prefer. I would suggest at least 2 times for a delicious flavor and to ensure that the garlic in the glaze is cooked.

6. Continue cooking the pork chops until they are completely cooked through. You can check with a meat thermometer to make sure that your chops are at least 145 degrees F.

7. Serve with your favorite veggies or sides and enjoy! These are so moist and delicious!
