Centsible Suppers: Barbecue Chicken Shepherd’s Pie

It is once again time for Centsible Suppers with My Sweet Savings! This week I shopped at Walmart and everything for my meal was right under $10. I had a great idea for this week’s meal as it combines all of my favorite items from a barbecue chicken dinner into one dish- Barbecue Chicken Shepherd’s Pie! I have to tell you that my family loved this dish and I will definitely be making it again! This should be enough to feed 4-6 people easily. You could add in another veggie if your prefer to make the meal go even farther. 

Here is what I bought:

Rotisserie Chicken marked down to $3.74. TIP: If you go to Walmart in the morning, they often have meat on markdown. I always buy several chickens, take the meat off the bone and freeze it!

1 can of sweet corn, drained $0.50

1 bag of mild cheddar and monterey jack shredded cheese, $2.24

1 bottle of honey barbecue sauce, $1.27

1 carton of pre-made mashed potatoes cooked according to microwave directions on package, $2.78

2-3 diced green onions, $0.50 (I forgot to add them in the picture)

Directions:

Preheat oven to 350 degrees.

Shred the rotisserie chicken and place in a bowl. Pour 3/4 jar of the barbecue sauce over the chicken and mix together.

In a small baking dish, place the barbecue chicken as the bottom layer

Layer the corn on top of the barbecue chicken

Sprinkle on the diced green onion

Add half the bag of cheese (around 1 cup)

Pour over the remainder of the barbecue sauce

Top with your cooked mashed potatoes and sprinkle with some seasoned salt.

Bake until bubbly around 20-25 minutes. During the last few minutes of baking, turn up the heat on the oven and let the potatoes broil.

Centsible Suppers with My Sweet Savings: Slow Cooker Turkey Polish Kielbasa with Green Beans and Potatoes

One of the things that I want to do on this blog is to empower you to be a smart and savvy shopper. One of the areas that we can all definitely afford to save in is the area of groceries, right? Groceries can be such an expensive part of any family budget, so when we can find ways to save, that is always a plus!

I thought it would be fun and helpful to our budgets to come up with one weekly supper idea that is based entirely off of sale items from the grocery store. This supper will be $10 or less, and if there are applicable coupons, you can add those into the mix to really get a great deal! I will be looking at ads from several stores, but my primary focus will be Publix, Walmart, Aldi and Target. Those are the 4 stores that I primarily shop at for groceries. I may ask some of you to come up with your own ideas from time to time and share other stores in your area. That would be so much fun to get you involved in this too!

For this week, I shopped at Publix and the current Publix ad that is valid through March 31. (this week’s ad is longer because of Easter). I purchased ingredients to make Slow Cooker Turkey Polish Kielbasa with Green Beans and Potatoes. My total came in at $8.36. This is enough to feed at least 6 people.

Here is what I bought:

2 packages of Butterball Polish Turkey Kielbasa BOGO, $2.99

1 lb. red potatoes $1.64

1 small onion, $0.37

1 small can of chicken broth, $1

3 cans of Libby’s green beans, $0.52 each ($1.56 total)

1 box of Jiffy corn muffin mix

Directions: 

Cut up both packages of the turkey kielbasa into chunks and place in the slow cooker

Quarter each of the potatoes, dice the onion and place in the slow cooker

Drain and empty the green beans into the slow cooker

Add the can of chicken stock in the slow cooker

Season with salt, pepper and garlic powder

Place the slow cooker on low for 6-8 hours.

Serve with cornbread and enjoy!

My entire family loves this frugal and delicious meal!

Grilled Chicken With Tropical Salsa: Feed a Family of Four for Under $10 with Products from Sprouts!

I had the opportunity to visit the new Sprouts Farmers Market in Palm Harbor, FL earlier in the week for a behind-the-scenes blogger tour. You can see my full review of the experience HERE. Since Sprouts is known for healthy living for less, I thought that it would be fun and helpful to prepare an easy meal with ingredients from my recent visit. Sprouts Farmers Market allows us to get healthy and delicious meals on the table without breaking the bank. In fact, I prepared this easy meal of grilled chicken with tropical salsa and jasmine rice for only $8.55! That is just $2.14 per serving for a family of four!  

Sprouts products used and pricing for each item: 

Sprouts boneless skinless chicken thighs @ $1.67 lb. I used half of the package so that was around $3.

Sprouts organic jasmine rice @ $1.99

1 Lime @ $0.20 each

2 Mangos @ 2 for $1

1 Pineapple @ $0.98

1 Bunch Cilantro @ $0.69

1 Red Onion @ $0.69

 

Salsa directions:

1 fresh pineapple cut in half and diced

2 fresh mangoes diced

1 small red onion diced

1 bunch of cilantro copped (you can use as little or as much as you prefer)

1 lime juiced

Salt to taste

Dice up all ingredients and place in a bowl. Add lime juice and salt to your taste. You can add as little or as much as you need.

Serving directions:

Prepare your rice according the package directions. While the rice is cooking, grill your boneless skinless chicken thighs.

Serve the tropical salsa over the rice and chicken and enjoy! This meal is so healthy, fresh and delicious…..perfect for summer!

How to Make the Perfect Hard-boiled Eggs

I don’t know about you, but making Hard-boiled eggs can be quite challenging! I have tried so many different methods and each time they never cook the right way. The skin never comes off and it seems like I lose half of the egg.

I was recently watching the show on the Food Network called The Kitchen and they mentioned that you can cook your eggs in the oven and they come out the perfect Hard-boiled egg. I was so intrigued with this method It sounds odd….cook your eggs and they will become hard-boiled? It sounded weird, but I gave it a shot. Guess what? It works and the eggs come out perfectly!

DIRECTIONS:

Take a 12-count muffin tin and place each egg inside the muffin slot.

Bake the eggs in a 325 degree oven for 30 minutes.

As soon as the eggs come out of the oven place them in an ice cold water bath to “shock” them. Keep them in the water bath for about 5 minutes.

The shells will peel right off and you will have delicious hard-boiled eggs with perfectly cooked yellow yolks!
