Easy Shepherd’s Pie

For many of us, cooking from what we have in our pantries right now is essential! One of my boys’ favorite things that I make very often on rotation is this Easy Shepherd’s Pie. This recipe couldn’t be easier to prepare and you can use whatever veggies that you have on hand. It really is such a versatile recipe. You can even use a Onion Soup packet to give it more flavor and change up the cheeses for a different taste!

Easy Shepherd’s Pie

Ingredients

1 1/2 lbs. ground beef or ground turkey

1/4 onion

2 Tbsp. minced garlic

1 can of corn, drained (you can use whatever veggies your family prefers)

1 can of green beans, drained

1/4 cup shredded mozarella cheese

1 container of Refrigerated Mashed Potatoes (you can also use instant if that is what you have on hand, but these are BOGO this week at Publix) I suggest that you cook these in the microwave for around 3 minutes.

Seasoned Salt/Pepper for Taste

Several pats of butter

Instructions:

Preheat oven to 350 degrees.

In a skillet sautee the onion and garlic together just until soft.

Add in the ground beef and cook through.

Toss in the drained canned vegetables and toss together with the hamburger mixture.

Add seasoned salt and pepper to taste.

In a square baking/casserole dish add the hamburger/veggie mixture.

Top with 1/4 cup shredded mozarella cheese.

Place the microwaved mashed potatoes on top.

I like to take a fork to “rake” out the potatoes on top of the dish.

Add 5-6 pats of butter on top of the dish. I also like to sprinkle on some seasoned salt and pepper on the top.

Cook in a preheated 350 degree oven for around 20-25 minutes.

For the last 5 minutes of baking, I like to turn the broiler on in the oven and let it brown the potatoes slightly.

Easy Pound Cake Recipe

Are you a pound cake lover? This recipe is super versatile and you can do so much with it! Substitute the Vanilla Extract for Almond or another flavor to give it a special flavor! You can also top it with Strawberries or a yummy glaze. You will not be disappointed I promise!

Recipe adapted from Julie Blanner

Ingredients:

2 Sticks Softened Butter

1 1/2 Cups Sugar

3 Eggs

2 Cups Flour

3/4 Cup Milk

2 Tsp. Vanilla

Directions:

  1. Grease a 1 lb. bread pan and preheat oven to 300 degrees.
  2. In a mixing bowl, beat butter until it is light in color (around 3 minutes). Gradually incorporate sugar and beat until fluffy.
  3. Add eggs one at a time and blend on low.
  4. Alternate adding flour and milk, add vanilla until smooth.
  5. Pour into bread pan and bake for 1 hour 20 minutes. (It may take longer. I actually went for around 1 hour 30 minutes.)
  6. Allow to cool and top with glaze or fresh fruit.

If you are searching for some new recipes to try out on the family, I have a winner for you! This recipe for Polka Dot Pasta Pizza is always a Family Favorite at my house!

This recipe is quite frugal as most of the ingredients you may already have in your pantry or fridge. I actually found this recipe on the side of the Hunt’s Italian Sausage Pasta Sauce which I got on sale at Publix for $0.50 per can with a coupon. AND, Hormel Pepperoni is on sale right now at Publix 2 for $3. With the $1/2 coupon HERE it makes it just $1 per pack!

POLKA DOT PASTA PIZZA 

INGREDIENTS

No stick cooking spray

1 24oz. can of Hunt’s Italian Sausage Pasta Sauce

1 box of uncooked Macaroni Pasta (I used Ziti and it turned out just fine)

4 eggs

1 cup (4oz.) of grated Parmesan Cheese

Pepper to Taste

30 slices of Pepperoni (1 3.5oz pkg has 30 slices)

2 cups shredded mozarella cheese (= 1 8oz. pkg.)

DIRECTIONS

Preheat oven to 375 degrees. Grease 9×13 baking dish with cooking spray. Cook Macaroni according to package directions and set aside.

Beat together egss add in Parmesan Cheese and pepper. Add in pasta to the cheese/egg mixture. Place mixture in baking dish. Pour the can of pasta sauce of the macaroni mixture. Sprinkle with the Mozarella Cheese and top with Pepperoni. Bake for around 20 minutes or until cheese is bubbling. 

Enjoy! You will love it, I took a little bite and my taste buds did the happy dance! 🙂

Starbucks Cranberry Bliss Bars Recipe

If you are a Starbucks lover like me, then I am sure you have seen these yummy Cranberry Bliss Bars in their Pastry Case. My hubby and I love these, and I think you will too! I am reposting this recipe for you all from last year! Winking smile

If you are searching for a different way to use cranberries this holiday season, you should definitely try this dessert! It combines white chocolate, cranberries, and an orange cream cheese frosting all married together for one sweet dessert!

Here is the recipe for these simply sweet dessert bars–(credit goes to Cookin’ Diva at Recipezaar for this unbelievable take on the real thing! Yes, they taste just like the bars at Starbucks, which is deadly!

  1. Preheat the oven to 350 degrees (325 for a glass or dark pan). Prepare a 10×15 by lining it with parchment paper or use a non-stick spray.
  2. BARS: Melt butter; cool slightly. With an electric mixer, beat together melted butter and sugars 3-5 minutes until light; gently blend in eggs and orange extract. Add the flour, baking powder, and ginger and beat briefly. Add the cranberries and chips, stirring just until incorporated.
  3. Spread thick batter in prepared 10×15 pan. Bake 350 for 23-24 minutes until light brown and a skewer tests clean. Don’t overbake. Let it cool completely. NOTE: If you use a 9×13 pan, the bars will be thicker and will take 27-29 minutes. **I used a 9 x 13 pan and they were perfect**
  4. FROSTING: Blend cream cheese and butter until fluffy. Add orange extract and confectioner’s sugar and beat until frosting is fluffy and spreadable (adding 1 t. milk if needed). Spread evenly over COOLED bars.
  5. GARNISH: Use a zester to remove rind from an orange; sprinkle zest over frosted bars. Chop 1/3 cup Craisins coarsely; sprinkle over frosted bars.
  6. DRIZZLE: Mix white chocolate and oil in a glass measuring cup. Microwave 1 minute; stir until melted. Use a fork or whisk to drizzle the white chocolate diagonally across the bars.
  7. Allow one hour for the white chocolate to set before cutting. **To make signature Starbuck triangles, cut into 20 large squares (5 cuts by 4 cuts with the knife). Then cut each square in half diagonally to create triangles.

These are so delicious–you will not be able to eat just one! What a great gift these would also make for someone on your list! Enjoy! 🙂

Tasty Tuesday- BBQ Pineapple Chicken

It’s Tuesday again, can you believe it? That means it is time for another Tasty Tuesday recipe! 

Today’s Tasty Tuesday recipe is BBQ Pineapple Chicken! I wish that I could take the credit for this one, but it all goes to my wonderful mother-in-law! From the moment that my hubby and I tried this recipe, we were hooked! It is so easy to make and if you are a stockpiler, you will more than likely have all of the ingredients on hand. It is also a very budget-friendly meal!

BBQ Pineapple Chicken

Ingredients:

1 pound of chicken breast or thighs cut into chunks

1 15oz. can of crushed pineapple, drained

1/2 bottle of your favorite BBQ Sauce

Directions:

Place can of drained crushed pineapple, BBQ Sauce and chicken chunks in a ziploc bag to let the mixture marinate for several hours.

Place the mixture into a baking dish and bake at 350 until chicken is cooked through.

Serve over brown or white rice with a nice green veggie for a satisfying and delicious meal! This is what we are having for dinner tonight, so sorry there is no pic! My mouth is watering thinking of this! 🙂
