Tasty Tuesday :: Bruschetta Chicken Bake

*Sorry, I  know that today is not Tuesday, I meant to get this posted last night, but was not able to!

I am going to start a new weekly feature here on the blog, called Tasty Tuesdays. I will feature one money-saving recipe that you can make for your family! This recipe will not only be inexpensive, but it will be an easy one to fix if you are in a hurry! For most of us, that is every day, right?

Today’s Tasty Tuesday recipe is: Bruschetta Chicken Bake

I came across this recipe several years ago on a Stove Top Stuffing box and my family was hooked from the first time that I made it! It is delicious, easy to make, and very affordable!

Bruschetta Chicken Bake

Prep Time: 10 minutes -Baking Time: 30 minutes

1 can {14 ½ oz} Diced tomatoes, undrained

1 pkg. {6 oz} Stove Top Stuffing mix for chicken

2 cloves minced garlic

1 ½ lbs. of boneless skinless chicken breasts {you can cut them up into bite sized chunks or leave each piece whole}

1 tsp. dried basil leaves

1 cup shredded mozzarella cheese

  1. Preheat oven to 400 degrees. Place tomatoes with their liquid in medium bowl. Add stuffing mix, ½ cup of hot water and the garlic. {or sometimes, I will use diced tomatoes with garlic to omit this step} Stir just until stuffing mix is moistened. Set aside.
  2. Place chicken in 13×9 inch baking dish; sprinkle with basil and cheese. Top with the stuffing mixture.
  3. Bake 30 minutes or until chicken is cooked through.

 Makes 6 servings, 1 cup each.

 I hope that will try this recipe and enjoy it as much as my family and I do!
