First of all let me tell you that this recipe for Blueberry Bread is by far one of the best recipes that I have ever come across! It has been in my husband’s family for many years and is a staple whenever guests are at my mother-in-law’s house! Thanks, Mom B. for this amazingly delicious, easy and frugal recipe!
Blueberry Bread
-Preheat oven to 350 degrees
-Spra
y bottom and sides of a regular-size loaf pan with non-stick spray
INGREDIENTS ::
1 3/4 cup of flour
2 tsp. baking powder
1/4 cup of shortening/butter (I use I Can’t Believe It’s Not Butter Baking sticks just like my mother-in-law)
1/2 cup milk
1 tsp. vanilla
3/4 c
up sugar
1 egg
1-2 cups of blueberries (I used closer to 2 cups as I really like the blueberry flavor) these can be fresh or frozen–I used frozen–just make sure that if you use frozen NOT to defrost them first–put them in the batter straight from the freezer. Defrosting them first, tends to make them mushy.
Sugar in the Raw
INSTRUCTIONS ::
Melt the butter in the microwave. Then add the egg, sugar, and vanilla and mix with mixer until smooth.
Mix the flour and baking soda in a seperate bowl and set aside.
Alternate adding mik and flour mixture to butter/sugar mixture and beat on high for 3-5 minutes.
Gently fold in blueberries. If using frozen blueberries, mixture will be stiff.
Add mixture to your greased loaf pan.
Sprinkle the top of the mixture with the Sugar in the Raw
Bake for around 1 hour in a 350 degree oven. Depending on your oven, you may need more or less time, just watch it closely towards the end of the baking time.
Let cool, eat and enjoy! This is perfect with a cup of yummy coffee or tea!
