Valentine’s Day is quickly approaching! I thought that it would be fun to share with you some budget-friendly recipes for that special day! This Brownie Cookie Sandwich idea is definitely budget and
kid friendly. If you are like me, I am sure that you already have a brownie mix in your pantry! You will also need a tub of frosting and some sprinkles.
INGREDIENTS: (Preheat oven to 375 degrees while you are mixing all the following ingredients together)
1 box of Brownie Mix (any kind should work but I used Duncan Hines Dark Chocolate Fudge)
1 egg

1/3 cup vegetable oil
2 TBSP. water
tub of your favorite frosting &
nbsp;
sprinkles/candy pieces
DIRECTIONS:
Mix the brownie mix, egg, water, and vegetable oil together. Using a cookie or ice cream scoop, place brownie dough on a greased cookie sheet. (using the scoop keeps the cookies all the same size) Place brownie cookies in preheated 375 degree oven and bake for around 7 minutes or until cookies are firm to the touch. Do not overbake!
After your brownie cookies have cooled, you are now ready to assemble your sandwiches! Take 2 cookies. Place icing on one side of the cookie, (the inside part) then put the other cookie on top. After you have assembled all of your sandwiches, you can then dip the outer edge of the cookies into sprinkles, candy pieces, nuts, etc…You could also put more icing on the top if you wanted–the possibilites are endless! You could also use ice cream instead of the icing! Have fun! 🙂
