Frugal Dessert Recipe for Valentine’s Day: Red Velvet Cream Cheese Cookie Sandwiches

 

I have a yummy and frugal dessert recipe to share with you all for Valentine’s Day! This recipe is super easy but oh-so yummy! This Cake Mix Cookie Recipe is actually a go-to recipe of mine and you can use any flavor of cake mix and add in your favorite chips, candies, etc… to make it your own!

Red Velvet Cream Cheese Cookie Sandwiches


INGREDIENTS

1 Box of Duncan Hines Red Velvet Cake Mix

1/2 cup vegetable oil

2 eggs 

1 cup of White Chocolate Chips

For icing:

1 Block of softened cream cheese

1 Cup of powdered sugar

1 tsp. vanilla

 

DIRECTIONS

Mix together Cake Mix, Oil and Eggs until a soft dough forms. Add in the White Chocolate Chips. 

With a Cookie Scoop, place dough onto Cookie Dish. I do this to ensure that all the cookies will be the same size.

Place in a 350 degree oven and bake for 10-12 minutes. 

Take out of oven and set aside to cool.

While cookies are cooling, mix together one block of Cream Cheese, 1 cup of Powdered Sugar and 1tsp. of vanilla.

Take 2 cooled cookies and place Cream Cheese frosting mixture in between 2 cookies to form a sandwich.

Enjoy! You won’t be able to eat just one! Open-mouth smile

Frugal Recipe: LEGO Brownies

My son Drew just turned 8 on Sunday. I surely don’t know where the time has gone! As with all boys his age, he just loves LEGOS. :D He wanted to take a fun dessert into school to share with his classmates. I was thinking of a fun way to incorporate his love of LEGOS and brownies and I came up with LEGO Brownies! 

Not only are these super easy to make, but they are a real crowd pleaser as well. Drew said that his classmates kept talking about them over and over! 

INGREDIENTS:

1 can of Vanilla Frosting

1 bag of plain M&M’s

1 box of regular brownie mix 

all ingredients that your brownie mix calls for

1 box of assorted food coloring

 

DIRECTIONS:

Bake the brownie mix as directed on the box. 

Let brownies cool.  In the meantime, divide the vanilla frosting into 4 separate bowls. Color the frosting red, green, yellow and blue with the food coloring. You can adjust the colors to your liking, but I like them to be vibrant.

After the brownies have cooled, cut into 15-16 assorted sizes of squares. (think different Lego Shapes)

Ice the brownies with your Food colored icing. 

Place M&M’s on top of the brownies in LEGO fashion. Make sure to place the M&M’s “M” side down.

Enjoy! This would be SO cute and inexpensive for a LEGO-themed birthday party! :D

Frugal Recipe: Pumpkin Crunch Cake

Pumpkin Crunch Cake

If you are anything like me, I adore this time of the year and all of the wonderful and yummy Pumpkin recipes that abound! One of my favorite Pumpkin cake recipes is for Pumpkin Crunch Cake. This is super easy to make but is so melt-in-your-mouth delicious! 

INGREDIENTS:

1 15oz. Can of Pumpkin

1 Can of Evaporated Milk

3 Eggs

3/4 Cup of Sugar

1/2 Tsp. Salt

3 Tsp. Pumpkin Pie Spice or Cinnamon (whatever you have on hand is fine)

1/2 Cup Melted Butter

1 Box of Yellow Cake Mix

 

DIRECTIONS:

Combine the first 6 ingredients with a whisk and pour into a greased 9×13 baking dish. Sprinkle the cake mix over the pumpkin mixutre and drizzle with the melted butter. Bake at 350 degrees for 45-60 minutes or until golden brown. Cool completely. Serve with whipped cream.

Frugal Recipe: Easy Cinnamon Roll Cake

Do you like Cinnamon Rolls? Then you will most definitley love this recipe for Easy Cinnamon Roll Cake. This recipe is not only yummy but also frugal as you probably have most of the items sitting right in your pantry! My boys just LOVE this recipe and it pairs nicely with a cup of coffee as well!

Cinnamon Roll Cake

  • 3 cups flour 
  • 1/2 tsp. salt 
  • 1 cup sugar 
  • 4 tsp. baking powder 
  • 1 1/2 cup millk
  • 2 eggs
  • 2 tsp. vanilla
  • 1/2 cup melted butter
  • 1 cup softened butter
  • 1 cup brown sugar
  • 2 TB flour
  • 1 TB cinnamon

DIRECTIONS:

Mix together the flour, sugar, salt, baking powder and milk, eggs and vanilla.

Stir in the melted butter very slowly then place the batter in a greased 9×13 dish.

Mix together the 1 cup of softened sugar, 1 cup of brown sugar, flour & cinnamon. Place that in dollops all over the cake batter and then swirl with a knife.

Bake at 350 degrees for 28-32 minutes until cooked through and golden brown.

As soon as the cake comes out of the oven drizzle the following glaze mixutre over the top: 

3 cups of powdered sugar, 1 tsp. vanilla & 5 tbsp. milk.

Frugal Recipe: The World’s Easiest Chicken Pot Pie

If you are like me and super busy this Summer, you don’t want to worry about what to make for dinner. Here is a frugal and easy recipe made with ingredients that you probably already have in your pantry and fridge and it won’t break the bank!

Today’s recipe is for: The World’s Easiest Chicken Pot Pie. This is a recipe that was passed down to me from my mom. It is so good that my son Drew begs me to make it all the time! I also take this dish to pot lucks or when friends need a dinner and it always gets rave reviews!

The World’s Easiest Chicken Pot Pie

1 2-count package of frozen pie crusts 

2 cans of your choice of veggies

1 can of cream of chicken

2-3 cooked chicken breasts, shredded

salt & pepper to taste

INSTRUCTIONS

Mix the canned veggies and Cream of chicken soup together.

Stir in the cooked, shredded chicken breast. 

Add salt and pepper to taste

Place the chicken veggie mixture in the first pie crust. 

Top the remaining pie crust over the chicken veggie mixture and crimp the edges. I also like to place a slit in the middle of the pie so that the steam can escape while the pie is cooking.

Place in 350 degree preheated oven and bake until golden brown.

Frugal Recipe: Yummy BBQ Pineapple Chicken

Since we have been seeing lots of sales on BBQ Sauce, I thought that it would be great time to post my recipe for Yummy BBQ Pineapple Chicken. This is one of the easiest recipes in the world to make and is very frugal considering most of the items are on sale right now. 

Through tomorrow (today for some areas) Kraft BBQ Sauce is on sale BOGO at Publix for $1.65. Use the $1/2 coupon to get 2 bottles for $0.65. Or, starting tomorrow, Winn-Dixie will have Kraft BBQ Sauce on sale for $0.89. Use the $1/2 coupon to get 2 bottles for $0.78.

You will also want to print the coupon for $0.75/2 Dole Canned Pineapple to use for this recipe. This is also very often on sale at most stores and I always have a few cans on hand in my pantry for this recipe. 

Now, on to the recipe……

YUMMY BBQ PINEAPPLE CHICKEN

INGREDIENTS:

2 lbs. Chicken Breast or Chicken Thighs

1 bottle of your favorite BBQ Sauce

1 large can of drained pineapple chunks or cubes

DIRECTIONS:

Preheat oven to 350. Place the chicken, BBQ Sauce and Drained Pineapple in a Baking Dish. Season with a little salt/pepper. 

Spread the mixture over the chicken to ensure that each piece is coated.

Bake for around 30 minutes or until chicken is cooked through. 

Serve with your favorite rice and veggie for an easy and delicious meal! 

I have also made this in the crock pot before and it tastes fabulous. My boys always gobble this one up!  :D

Frugal Recipe: DIY- Homemade Pico de Gallo

I am a huge lover of Pico de Gaillo! It just tastes so fresh and is so yummy with Whole Grain Tortilla Chips for a low-fat snack. I wanted to share with you a recipe for Homemade Pico de Gallo that is super affordable, easy and oh-so yummy! 

 

I even like to put this on top of grilled chicken or my salad. You don’t need additonal dressing because of the lime in the Picco de Gallo.

INGREDIENTS

4-5 Roma Tomatoes

1/2 Red Onion

1 Lime (the juice)

1 bunch of Cilantro

Salt for taste

 

DIRECTIONS

Dice the Roma Tomatoes, Red onion and Cilantro. Add in the juice of one lime and salt for taste. You could even add in a jalapeno if you like spicy things, but I just can’t handle it. 🙂

Enjoy with Tortilla Chips or on Grilled Chicken or Salad. 

I love this so much that I am making a second batch today!

Frugal Recipe: Ro-tel Chicken Spaghetti

I have another yummy and frugal recipe to share with you all! Rotel Chicken Spaghetti combines many of the ingredients that are on sale with the current Publix ad that runs through tomorrow (today for some areas). 

This recipe is so delicious that once again, my husband and son asked when I was making it again! My husband even told me that this dish tasted like it should be in a restaurant! I took a bite and yep, it is delicious! Just don’t look at the calories–defintely not something that you would make all the time but it is okay to indulge now and then.

Rotel Chicken Spaghetti

4-6 Chicken Breasts Cooked and Shredded (I used leftover Rotisserie Chicken)

1 Can of Ro-tel Tomatoes 

1 Can of Chicken Broth (I only had the Box of chicken broth so I used about 1 1/2 cups)

1 Can of Cream of Mushroom Soup

12 oz. cooked spaghetti (I used Penne and it turned out just fine)

1 lb. of Velveeta Cheese Cubed

Directions

In a bowl, Mix the Cream of Mushroom Soup, Chicken Broth and Ro-tel tomatoes together.

In a 13×9 greased casserole dish layer as follows: Spaghetti, Chicken, Soup mix, Cheese.

Place dish in a 350 degree oven and bake until cheese is melted.

Remove from oven and mix together. You may need to add some salt/pepper to taste.

Frugal Recipe: Impossibly Easy Cheeseburger Pie

Since we have such a great sale this week at Walgreens on Bisquick, I thought that I would pass along one of my family’s all-time favorite recipes! Impossibly Easy Cheeseburger Pie couldn’t be simpler to make and it tastes so good! Plus, if you are GF, Bisquick now makes a great tasting GF Bisquick that can be adapted to most Bisquick recipes.

Bisquick can be used for some many awesome recipes from entrees to appetizers to desserts and more. I love to keep several boxes on hand. You can head on over to the Bisquick Website to browse through hundreds of yummy recipes. 

Impossibly Easy Cheeseburger Pie

1 lb. of ground beef or ground turkey (I use ground turkey)

1 small-medium onion

2 eggs

salt/pepper to taste

1/2 cup Bisquick

1 cup of milk

1 cup of shredded Cheese (I use what I have on had which is usually mozarella, but you can also use cheddar)

DIRECTIONS:

Cook the meat and onion until done. Place in a greased glass pie pan. 

Place the cheese over the top of the meat and onion mixture.

Whisk together the eggs, Bisquick and milk, then pour over the meat/onion/cheese mixture.

Bake at 400 for around 20-25 minutes until the center is cooked through.

Slice and enjoy! Winking smile
