Can you believe that Thanksgiving is next week? This year has been flying by way too quickly so I am excited for this time to be with family and friends and to just relax and give thanks for all of the blessings that this year has brought my way. I have so much to be thankful for!
When it comes to planning the Thanksgiving menu, one of the must-have items on my list has to be Cranberries of some kind! Whether it be Cranberry Sauce or Cranberry Relish, Cranberries are a fun and festive way to add pizzaz to any Holiday menu!
There is a new trend to Thanksgiving that is taking off and that you can be a part of! Friendsgiving fever is spreading quickly! The millennial alter-ego to Thanksgiving – Friendsgiving is the social party that is reshaping the traditional way we give thanks. In honor of this new American tradition, the Cranberry Marketing Committee is launching its second annual Cranberry Friendsgiving Photo Contest giving entrants a chance to win $4,000 in prizes for the best cranberry dishes, drinks and décor. Simply post a photo of your cranberry creation on Twitter, Facebook, Instagram or Pinterest with #FriendsgivingCranberryContest and then upload it at CranberryFriendsgiving.com to enter. How much fun is that?
I was sent an awesome package of Cranberry goodies from the Cranberry Marketing Committee that contained Fresh Cranberries, Dried Cranberries, Cranberry Sauce, Cranberry juice and other items. I made a few yummy Cranberry recipes that you too can prepare this Holiday season. These recipes are sure to be a hit with everyone!
Slow Cooker Cranberry Apple Cider
INGREDIENTS:
2 Pounds of your Favorite Apples sliced into rings. (I used Gala apples since that is what I had on hand)
1 Navel Orange Cut up into Segments
1 Cup of Whole Fresh Cranberries
7 Cups of Water
5-6 Whole Cinnamon Sticks
DIRECTIONS:
Place the Apples, Orange Segments, Cranberries and Water in the Slow Cooker. Mix together and Cook on low for 6-8 hours.
Take all of the ingredients and mash together. (The smell will be amazing!)
Place the Mashed Cranberry/Apple mixture through a strainer. You may have to do this several times until the liquid is free of the mixture.
Pour the Cranberry Apple Cider Liquid into mugs and enjoy Hot or Cold! This is so delicious and a great take on the traditional Apple Cider!
Gluten Free Cranberry Chocolate Chip Cookies
INGREDIENTS:
3/4 Cup Fresh Cranberries
1 1/2 Cups Semi-Sweet Chocolate Chips
1/2 Cup Real Unsalted Butter Softened
1 1/2 Cups Old Fashioned Gluten Free Oats
1 Cup Gluten Free Flour (I used Bob’s Red Mill)
2 Large Eggs
1/2 Tsp. Baking Soda
3/4 Cup Brown Sugar
1/2 Cup Sugar
1/2 Tsp Cinnamon
1/2 Tsp Salt
1 Tsp Vanilla
DIRECTIONS:
Preheat the oven to 350 degrees.
Mix together the Gluten Free Flour, Baking Soda and Salt in a large bowl and set aside.
In another bowl (I used my KitchenAid Mixer) cream together the butter, eggs and sugars. Add in the vanilla and cinnamon.
Add in the Flour mixture a little at a time until blended.
Slowly add in the Gluten Free Oats, Cranberries and Chocolate Chips.
Drop by Tablespoonfuls onto a prepared Cookie sheet.
Bake in the 350 Preheated oven for 10-12 minutes. You need to keep checking as they may even need to go a bit longer.
Cook until Golden Brown and Enjoy!
