Budget Friendly Recipes :: Stuffed Peppers

I wanted to go ahead and post another one of my budget-friendly recipes for you all since I have not done that in awhile. This recipe is made with ingredients that many of us already have on hand! Last night I made these yummy stuffed green peppers with steamed corn–boy, were they delicious! You could even have a side of black beans with these-Yummy!

Stuffed Peppers

INGREDIENTS ::    

4-6 green or red peppers

1 lb. of ground turkey                  

2 cups of cooked brown rice

3 cloves garlic

1 small can of diced tomatoes

1 small yellow

2 green onions

half jar of green olives

worchestire sauce

small 8oz can of tomato sauce

shredded mozarella cheese

salt/pepper for taste

DIRECTIONS ::

Brown the ground turkey along with the onions and garlic. While the ground turkey is browing, you can go ahead and cook your rice if you have not already done so. After the turkey mixture has browned, add in a few dashes of worchestire sauce for some seasoning. Next, add your olives, the cooked rice, and the diced tomatoes. In the meantime, cut off the top of your green peppers and remove the inside. Parboil your green peppers for just about 3 minutes–until they get a little soft to the touch. After you have parboiled your peppers, add the turkey/rice mixture. Spoon some of your tomato sauce on top of each pepper and sprinkle with cheese. Cover with foil and bake at 350 degrees for around 45 minutes! Remove from the oven and enjoy! These are so delicious and good for you! I served them with some steamed corn, but you could do whatever other veggies that your family enjoys! 🙂
