I made this Sweet and Sour Chicken with Pineapple chunks dish for dinner last night and it was a big hit! It is very budget-friendly, and loaded with lots of veggies! We used brown rice as well to make it a healthier dish! Enjoy!
Sweet and Sour Chicken with Pineapple Chunks
2 cups Brown Rice, uncooked
1 can (20oz.) Pineapple Chunks
2 Tbsps. Olive oil
1 medium green pepper cut into chunks
1 red pepper cut into chunks
1 medium onion cut into chunks
1 lb. boneless skinless chicken breasts cut into chunks
1 cup sweet & sour sauce
2 Tbsps. soy sauce
*optional-mushrooms cut into chunks*
Directions:
-Prepare your rice according to directions. I use a rice cooker, so the rice can be cooking while I am preparing the rest of the dish. A rice cooker also saves so much time!
-Drain pineapple from can and reserve 2 Tbsps. of the juice.
-Heat oil in a large skillet or wok over medium heat. Add the peppers, onions, and chicken chunks. Cook until chicken is cooked through. Then, add the sweet & sour sauce, soy sauce, pineapple chunks and reserved pineapple juice. Heat all of these ingredients through until nice and warm!
-Serve the chicken and veggie mixture over your cooked rice!
-Eat and Enjoy! This is so delish! Leftovers are even better the next day! 🙂
