Banana Streusel Muffin Recipe

2 cups all-purpose flour

1 cup sugar

1 tsp. baking powder

1/2 tsp. salt

1/2 tsp. baking soda

1/4 tsp. ground cinnamon

2 eggs

1/4 tsp. vanilla

1 cup sour cream                                                                         

1/4 cup melted butter

1/4 cup sugar

2 medium ripe mashed bananas

Streusel Topping:

3 tablespoons all-purpose flour

1/4 tsp. ground cinnamon

2 tablespoons butter

-Preheat oven to 375 degrees  

-In a large bowl, combine the flour, sugar, baking powder, salt, baking soda, and cinnamon. In a small bowl, beat eggs, sour cream, butter,vanlla, and bananas-stir into dry ingredients just until moistenened. Do not overmix! Fill greased or paper-lined muffin cups with batter.

-To make the streusel mix, combine sugar (I added a little brown sugar as well for that caramel taste-yummy!) flour, and cinnamon in small bowl; cut in the butter. Sprinkle over the muffins. Bake for 20-25 minutes! Enjoy! These are so yummy with a cup of coffee!
