~Zuppa Tuscana Soup Recipe~

Since I posted on my Facebook page yesterday that I was making this soup for dinner, I have had so many of you request the recipe from me! Well, here ya go! Now, I wish that I could take credit for the recipe, but a wonderful lady at my church, Linda is the one who deserves that! This will be great on a cold winter night or just whenever you feel like a quick pick-me-up meal! Homeade soup is so comforting don’t ya think? 😉

This Zuppa Tuscana Soup recipe is so delicious! I promise that you will be making this one over and over again! My hubby who is not usually a soup eater raves about this! He even tells me that it is better than the one at Olive Garden!

Zuppa Tuscana Soup   

1 1/2 cups of fresh sausage links cut up in 1/2 inch slices (I used mild, but if you want a kick, you could do spicy!)

3/4 cup diced onions

1 1/4 teaspoon minced garlic

1 qt. chicken broth

3 large potatoes,cubed (I used 4 medium russetts)

2 cups kale, chopped small

1/3 cup heavy whipping cream

salt/pepper to taste

–Cook sausage in a stock pot for a few minutes. Add garlic and onions; cook until sausage is browned and onions are translucent. Add chicken broth and potatoes. Season with salt and pepper. Simmer for about 15-20 minutes or until potatoes are tender. Just before serving add the kale and heavy whipping cream. Let simmer for a few more minutes before serving! This is delicious served with breadsticks!****
