Well, it is hard to believe that this time next week we will all be stuffing our faces with yummy food! For today’s editon of Thrifty Thursday, I thought that I would share a few of my most inexpensive and favorite Thanksgiving side dishes! These dishes are super yummy, yet oh so inexpensive! They are some of my family’s favorites! 😉
Roasted Zucchini and Squash
3 medium yellow squash
3 medium zucchini
5 cloves garlic
1 large onion
olive oil
-Cut up the squash and zucchini into nice round discs. Cut up your onion into nice circles. Dice up the garlic (you can even use already minced if you have that on hand) Drizzle olive oil over all the veggies and give them a good toss with your hands. Place on cookie sheet. Season with salt and pepper. Roast on 350 degrees until all the veggies are nice and caramelized! 😉
This is so yummo and I promise that you will not be disappointed! We love this so much that I make it all the time during the year as well!
Corn Pudding
1 15 oz. can whole kernel style corn (drained)
1 15 oz. can cream style corn
1/2 cup softened butter
1 box Jiffy corn muffin mix
1 cup sour cream
Preheat oven to 350 degrees. Lightly grease a 2 quart baking dish. (I like to use the butter left on the wrapper of the stick that I am using-that way you use every last bit of the yummy butter!)
Mix all above ingredients and place into your greased baking dish. Bake for about 40-45 minutes, or until a knife inserted comes out clean!
